Waffle Berry pie

Pudding at the 2017 Christmas dinner dance

Pampered Chef Recipe for Waffle Berry Pudding

  • 2 packets (240g each) toasting waffles
  • 150g White chocolate
  • 300g frozen raspberries or mixed berries
  • 55g caster sugar
  • 1 tbsp plain flour
  • 500 ml creme fraiche
  • 3 eggs
  • Half teaspoon vanilla essence
  • 2 tablespoons icing sugar

Preheat oven to 180 oC. Cut waffles into 1 inch pieces. Break the chocolate into squares. Place half of waffles in dish. Sprinkle with half chocolate into squares. Place half of waffles in dish. Sprinkle with half chopped White chocolate and half of berries. Repeat layers.

Combine sugar and flour in Batter Bowl. Whisk together creme fraiche, eggs and vanilla essence. Pour evenly over top of waffle mixture.

Bake 20 - 25 mins or until golden brown and set in centre.

Let it stand for about 10 mins before serving.

Sprinkle with icing sugar if desired.
